Ingredients
- 2 cups dried fava beans
- 4 cups water
- 1 teaspoon baking soda
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1/4 cup olive oil
- 1 lemon, juiced
- 3 cloves garlic, minced
- 1/4 cup chopped parsley
- 1/4 cup chopped tomatoes
- 1/4 cup chopped onions
- Optional: chopped hard-boiled eggs for garnish
- Optional: additional olive oil for drizzling
Steps
- Rinse the dried fava beans and soak them in water overnight.
- Drain and rinse the soaked beans.
- Place the beans in a slow cooker and cover with 4 cups of water.
- Add the baking soda, ground cumin, ground coriander, and salt to the slow cooker.
- Cook on low for 8-10 hours, or until the beans are tender.
- Once cooked, drain any excess water from the beans.
